okay so as the name implies, this recipe can get you rollin' if your pipes are a little backed up. for that reason, my father in law loves them. after trying them a good 5 years ago, he still talks about them and requests that i make him some! haha so funny! they are also delicious!
1 1/4 cup flour (i use rice or spelt)
1 1/2 cup oats
1/2 tsp baking soda
1/2 tsp sea salt
1 cup softened organic butter
1 cup Xylitol
1 teaspoon non-bitter Stevia liquid
2 organic, free-range eggs
2 cups organic, fair trade chocolate chips
1 cup chopped nuts (walnuts are best)
COMBINE flour, baking soda and salt in small bowl. Beat butter, xylitol, stevia and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE in preheated 375-degree [Fahrenheit] oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely. Makes about 20, depending on how much of the dough you eat. : )
